Anne Shirley and Diana Barry’s Taffy

“After tea Diana and I made taffy. The taffy wasn’t very good, I suppose because neither Diana nor I had ever made any before. Diana left me to stir it while she buttered the plates and I forgot and let it burn; and then when we set it out on the platform to cool the cat walked over one plate and that had to be thrown away. But the making of it was splendid fun.” — Anne of Green Gables xviii

Ingredients
2 cups sugar
2 cups molasses
1/4 teaspoon soda
1 tablespoon vinegar
2 tablespoons butter, sweet

Directions
1. Boil sugar, molasses, vinegar and butter in a pan, stirring constantly in the last part of the cooking until it reaches 255 degrees F.
2. Before removing from fire stir the soda in. Pour into buttered (sweet butter) tin.
3. When easy to handle, after cooling off a bit, pull until light and firm.
4. Draw in sticks and cut in about 1 inch lengths.
